Stuffed Black Mushrooms

This dish is easy enough for the kids to help in the kitchen, fast enough to make in minutes and tasty as a side dish with about any main meal!

The stuffing I chose takes a few ingredients, a bit of chopping and ta-da!

Place in the oven a few minutes before dishing up the other food as it needs to be presented warm.

Stuffed black mushroom

Preparation time: 10 minutes

Baking time: 15 - 20 minutes


6 - 10 Large black mushrooms, washed and skinned.

2 Large baby marrows, grated

1 Red onion, chopped

1 tsp crushed garlic

1 tsp black grounded pepper

2 tsp salt

1 tsp nutmeg

1 tsp paprika

15ml olive oil

fresh thyme

30ml greek yoghurt

micro-leaves for decoration


1. Pre-heat the oven to 160 degrees Celcius (320 degrees Fahrenheit)

2. Prepare the vegetables, add it to a bowl and the spices, herbs as well as the olive oil.

3. Place unto an oven sheet or dish, cook for 20 minutes in the oven until done.

4. Remove from the oven, scoop yoghurt onto each mushroom and sprinkle micro-leaves on for decoration.
