Blueberry Yogurt Popsicles

For these Blueberry Frozen Yogurt popsicles, I made my own berry coulis and used frozen berries inside them.

The recipe is simple, 2 cups low fat yogurt (flavoured) or Greek plain yogurt. Handful of blueberries as well as a few spoons of Berry Coulis.

Add all the ingredients in a blender, then place into an ice cream mould (don’t forget the ice cream stick), freeze for at least 3 hours and enjoy!

Blueberry Coulis

2 Cups Frozen Blueberries

100ml Water

60g Castor Sugar

30ml Lemon Juice

2 Star Anice

2 Cinnamon Sticks

Add all the ingredients to a saucepan and heat over low heat for 40 minutes. Strain the coulis before use.
