Bacon and brussel sprout kebabs
Brussel sprouts are often the forgotten vegetable during festivities. I like adding them to dishes such as pot roasts, sauces and gravies or baked dishes. This time around, let’s add them them to a kebab.
I’ve added bacon which I cut myself, drizzled honey over it as they came out of the oven. The colours are mesmerizing. Should you not enjoy pork, replace with chicken strips.
Did you know? Purple brussel sprouts contain anthocyanin flavonoids which have antioxidant and anti-inflammatory properties and are responsible for the purple hue of the sprouts.
Preparation time: 15 minutes
Cooking time: 20 minutes
300g Streaky Bacon
250g Purple brussel sprouts
1 tsp salt
Honey for drizzling
Place the brussel sprouts in a pot of water together with a teaspoon of salt. Simmer for 6 - 7 minutes until soft. Strain, and pat dry.
Pick up a skewer, start with the bacon, insert the skewer on one side, then add a brussel sprout, pick up the bacon again, insert the stick through the other end. Repeat for until all ingredients are finishes.
I’ve roasted mine in the oven under the grill for 10 minutes. Another option is to place them on a barbecue grill outside.
Drizzle honey over the kebabs as soon as they come out of the oven. Dish up immediately.
